Pour the apple cider into a large pot. Add the cinnamon sticks and bring to a boil. Once the cider comes to a good boil, lower the heat to medium-low so the mixture simmers.
Cook the cider for 1 ½ hours. The cider will thicken and reduce. Once you get to the 1 ½ hour mark, lower the heat to medium-low and stir often until you have about ¾ cup of reduced cider syrup.
Remove the cinnamon sticks from the syrup.
Put the cream cheese and sugar in a large bowl and whip it up on high for 60 seconds. Pour in the cider into the cream cheese mixture. Mix the mixture until it is evenly blended.
Spoon into a bowl, sprinkle with cinnamon, and serve with sliced apples.
