Pumpkin French Toast with Maple Butter

Ingredients

For French Toast

  • 8 slices of thick-cut bread (about 1-inch)
  • 3 large egg
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • ½ cup pumpkin puree
  • 1 teaspoon ground cinnamon
  • ½ tsp pumpkin pie spice
  • 2 tablespoon powdered sugar (+ extra for topping)

For Maple Butter

  • ½ cup softened butter
  • 3 tbsp maple syrup

Instructions

For French Toast

  • Pre-heat griddle or pan.
  • Whisk together, eggs, milk, pumpkin, cinnamon, pie spice, vanilla and sugar.
  • Dip the first side into the egg mixture and allow it to sit for 15-20 seconds. Flip and repeat. Place french toast on the griddle or into the pan. Repeat with remaining slices of bread.
  • Cook about 3 minutes per side. The french toast should be golden before flipping.
  • Transfer to a serving plate when all slices have finished cooking. Serve with maple butter and maple syrup.

For Maple Butter

  • In a bowl, whip the butter and syrup till smooth. Transfer to a butter crock or sealable container.
