Chai Spiced Banana Bread

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 tsp baking soda
  • ½ teaspoon salt
  • ½ teaspoon cardamon
  • 1 tsp ground cinnamon
  • ½ teaspoon ginger
  • ¼ tsp all spice
  • ½ cup vegetable oil
  • ½ cup granulated sugar
  • ¼ cup light brown sugar
  • 2 large eggs
  • 3 medium bananas, mashed
  • ¼ cup sour cream
  • 1 teaspoon vanilla extract

Instructions

  • Pre-heat oven to 350°F. Grease a 9x5 inch loaf pan and set aside.
  • In a medium bowl, whisk together flour, baking powder, baking soda, salt, cardamon, cinnamon, ginger, and all spice. Set aside.
  • In a mixing bowl, mix oil and sugars together until combines with an electric or stand mixer.
  • Add the eggs one at a time. Add the bananas, sour cream, and vanilla. Beat till combined.
  • Slowly add the flour mixture until it is just combined.
  • Pour into the loaf pan and bake for 60 minutes. Test the middle of the bread with a toothpick. No raw batter should remain when the pick is removed. Remove from oven, cool, and serve.
