Irish Colcannon with Bacon

  • 2 1/2 lbs Yukon Gold potatoes
  • 1/2 head cabbage, cut into slices
  • 2/3 cup heavy cream
  • 3 tbsp salted butter
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 8 slices bacon, chopped
  • 5 green onion, sliced

  1. Boil potatoes in a medium pot till tender and ready to mash, about 10 minutes. While potatoes cook, place cabbage in a microwave safe bowl and add about 1 1/2 of water to the bowl. Cover and microwave for about 10 minutes, or until tender. 

  2. While the potatoes and cabbage cook, cook bacon in a skillet until crisp. Transfer to a paper towel lined plate for later. 

  3. Drain water from potatoes. Add cream and butter and mash using a hand mixer or a potato masher. Add salt and pepper. 

  4. Remove cabbage from water and add to potatoes. Gently stir. Add the bacon and green onion (reserving about a tbsp for topping of each). 

  5. To serve, place a little additional butter in the center and top with bacon and green onion.
