Irish Colcannon with Bacon

Ingredients

  • 2 ½ lbs Yukon Gold potatoes
  • ½ head cabbage, cut into slices
  • cup heavy cream
  • 3 tablespoon salted butter
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 8 slices bacon, chopped
  • 5 green onion, sliced

Instructions

  • Boil potatoes in a medium pot till tender and ready to mash, about 10 minutes. While potatoes cook, place cabbage in a microwave safe bowl and add about 1 ½ of water to the bowl. Cover and microwave for about 10 minutes, or until tender. 
  • While the potatoes and cabbage cook, cook bacon in a skillet until crisp. Transfer to a paper towel lined plate for later. 
  • Drain water from potatoes. Add cream and butter and mash using a hand mixer or a potato masher. Add salt and pepper. 
  • Remove cabbage from water and add to potatoes. Gently stir. Add the bacon and green onion (reserving about a tablespoon for topping of each). 
  • To serve, place a little additional butter in the center and top with bacon and green onion.
