Pumpkin Banana Muffins

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ teaspoon ground cinnamon
  • ½ cup vegetable oil
  • 3 ripe bananas, peeled
  • ½ teaspoon vanilla extract
  • ¾ cup sugar
  • 2 large eggs
  • 1 cup canned pumpkin

Instructions

  • Preheat oven to 350 and spray a 12 muffin pan with non-stick baking spray.
    In a large bowl, mix oil, Bananas, vanilla, sugar, pumpkin, and eggs. Mix till smooth. Slowly mix in flour mixture.
  • Sift together flour, salt, baking soda, baking powder, cinnamon, and set aside. 
  • In a large bowl, mix oil, Bananas, vanilla, sugar, pumpkin, and eggs. Mix till smooth. Slowly mix in flour mixture.
  • Pour batter into muffin tins so they are about ¾ full. Bake for 20 minutes. Test muffins by inserting a toothpick into the center. The toothpick should have a few light crumbs when removed.
