Italian Sub Pasta Salad

Ingredients

  • 1 lb shaped pasta, cooked according to package instructions
  • 2 bell peppers (any color will work)
  • cup sliced black olives
  • 6 oz salami, chopped
  • cup sliced green onions
  • ½ pint cherry tomatoes, halved
  • 8 oz mozzarella petals
  • ½ cup chopped banana peppers

For Dressing

  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • ½ teaspoon garlic powder
  • 1 tsp dried oregano
  • 1 teaspoon dried basil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • For dressing, whisk all ingredients together and set aside.
  • In a large bowl, add pasta and all veggies, meat and cheese. Pour dressing over the top and stir gently to evenly mix all ingredients.
  • Cover and store in the fridge about 30 minutes before serving.
