Sweet Potato and Sausage Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 lb mild Italian sausage
  • ½ small white onion, diced
  • 2 cloved garlic, minced
  • 6 cups chicken broth
  • 2 cups peeled chopped sweet potatoes
  • 1 cup heavy cream
  • 3 cup fresh spinach
  • ½ teaspoon crushed red pepper flakes
  • ½ teaspoon black pepper
  • salt, to taste

Instructions

  • In a soup pot, add the olive oil, ground sausage, and onion. Cook over medium heat till the sausage is no longer pink and onion softens.
  • Add garlic and stir.
  • Add potatoes and broth. Simmer soup over medium heat until potatoes are fork tender, about 8-10 minutes.
  • Add the cream, spinach, pepper, and red pepper flakes. Stir. Allow soup to continue simmering till the spinach is wilted and reduced in size. Season with salt if desired. Serve.
