Grinch Christmas Kiss Cookies

Ingredients

  • 2 cups all-purpose flour
  • ¼ teaspoon baking soda
  • 1 cup granulated sugar
  • ½ cup salted butter room temperature
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup green sanding sugar
  • 32 candy cane kisses

Instructions

  • Preheat the oven to 350° F. Line 2 large baking sheets with parchment paper or silicone baking sheets. Set aside.
  • In a mixing bowl, whisk together the flour, and baking soda.
  • In a separate, medium mixing bowl, beat the butter and sugar with a hand mixer until light and fluffy. Add the egg and vanilla extract. Beat to combine.
  • Gradually add the flour mixture as you beat the dough on low speed. Mix until just combined.
  • Use a small cookie scoop or tablespoon to portion the dough. The dough should be about 1 ½ tablespoons of dough per portion. Use your hands to roll the dough into balls. Roll the cookie ball in the green sanding sugar.
  • Place the cookies on the prepared baking sheet. The cookies should be about 2-inches apart.
  • Bake for 10 minutes.
  • Allow cookies to sit out of the oven for about 3 minutes. Press a candy cane kiss into the center of each cookie.
  • Let the cookies for for a few more minutes before transferring them to wax paper or a baking rack to finish cooling.
