Red Cabbage with Apples (Apfelrotkohl)

Ingredients

  • 1 white onion, chopped
  • 1 tablespoon olive oil
  • 1 large head of red cabbage (about 6-7 cups chopped), chopped
  • 4 tart apples, peeled and chopped
  • 1 ½ teaspoon salt
  • ½ teaspoon nutmeg or mace
  • ¼ cup granulated white sugar
  • 1 teaspoon black pepper
  • ¼ cup apple cider vinegar
  • ¼ cup apple cider

Instructions

  • In a large pot, cook the onions and the olive oil together until the onions are tender.
  • Add the cabbage, and cook for about 8-10 minutes. The cabbage will reduce in volume.
  • Add the salt, sugar, nutmeg, and pepper. Stir to evenly mix.
  • Add the apples, vinegar, and cider. Allow the cabbage to simmer for 25-30 minutes, stirring occasionally.
  • Serve as a side dish or a main meal. Enjoy!
