Apple Cranberry Spinach Salad

Ingredients

For Salad:

  • 10 oz fresh baby spinach
  • 2 medium tart apples
  • ½ cup toasted chopped pecans
  • cup crumbled feta cheese
  • ¼ cup dried cranberries

For Dressing:

  • cup olive oil
  • 1 ½ tablespoon apple cider vinegar
  • 1 ½ tablespoon maple syrup
  • 1 1/1 tablespoon jellied cranberry sauce
  • 1 teaspoon dijon mustard
  • ¼ teaspoon black pepper

Instructions

For the Dressing:

  • Whisk together all the dressing ingredients. Set aside till ready to serve. The dressing can be made 2-3 days in advance.

For Salad:

  • Place spinach into a large bowl.
  • Cut the apples into thin slices. Top the salad with sliced apples, pecans, cheese, and cranberries.
  • Next, top the salad with the dressing and toss to evenly mix the ingredients. Serve.
