Zucchini and Hamburger Stew

Ingredients

  • 1 tablespoon olive oil
  • 1 lb lean ground beef
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 24 oz tomato based pasta sauce
  • 1 ½ tablespoon soy sauce
  • 14.5 oz can reduced sodium beef broth
  • 3 medium zucchini, halved and chopped
  • 1 teaspoon italian seasoning
  • 1 bay leaf
  • 1 tsp black pepper
  • ½ teaspoon salt (optional)
  • shredded cheese and sour cream, for topping

Instructions

  • In a dutch oven or soup kettle, add the olive oil, beef, onion, and pepper. Cook till the meat is no longer pink and veggies are tender.
  • Add the garlic and zucchini and cook for an addition 2 minutes.
  • Add all remaining ingredients. Cover and simmer on medium-low for 20 minutes.
  • Serve in bowls and top with cheese and sour cream.
