Instructions
In a dutch oven or soup kettle, add the olive oil, beef, onion, and pepper. Cook till the meat is no longer pink and veggies are tender.
Add the garlic and zucchini and cook for an addition 2 minutes.
Add all remaining ingredients. Cover and simmer on medium-low for 20 minutes.
Serve in bowls and top with cheese and sour cream.
