Caprese Mac and Cheese

Ingredients

  • 1 pound elbow noodles
  • 2 tablespoon butter
  • 2 tablespoon flour
  • 1 ½ cup milk
  • ½ cup chicken broth
  • ½ tsp salt
  • ½ teaspoon Black pepper
  • 1 ½ cups shredded mozzarella cheese
  • 1 ¼ cup diced grape tomatoes
  • ¼ cup chopped fresh basil

Instructions

  • Cook pasta according to package directions. Drain and set aside.
  • In a large sauce pot melt the butter. Whisk in the flour until it creates a thick paste.
  • Slowly pour in the milk and chicken broth while whisking. Add salt and black pepper. Whisk and allow the mixture to slightly thicken.
  • Stir in mozzarella cheese. Add the noodles and stir till combined.
  • Next, gently stir in the basil and tomatoes.  Serve immediately.
