Pancake Bites

Ingredients

Pancake Bites:

  • 1 ¼ cups pancake mix
  • ½ cup milk
  • 1 egg
  • ¼ cup maple syrup
  • ½ cup cooked crumbled pork sausage
  • cup cooked chopped bacon about 5 slices

Maple Glaze:

  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1 tablespoon maple syrup

Instructions

  • Preheat oven to 350F.
  • In a bowl, whisk together pancake mix, milk, egg, and syrup till smooth. Grease a 24 cup mini muffin pan with cooking spray.
  • Fill each muffin cup ⅔ full with batter. Top each muffin with a small amount of chopped bacon or crumbled sausage (or a mixture of both). Make sure that you have about ½ - ⅓ of the meat left to top after baking.
  • Bake for 10 minutes and remove from oven. Allow bites to cool slightly. While bites are cooling, make the maple glaze. Whisk powdered sugar, maple syrup, and milk together till smooth.
  • Remove Pancake Bites from baking pan. Dip top of bites into the glaze and top with additional sausage and/or bacon. Allow glaze to set and enjoy!
