Ingredients

Gingerbread Cookie Bar

  • 1 cup brown sugar, packed
  • ¼ cup salted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla
  • 3 tbsps milk
  • cup molasses
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg

Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • ½ teaspoon vanilla extract
  • 2 ½ cups powdered sugar

Instructions

Gingerbread Cookie Bar

  • Preheat the oven to 350°F and lightly grease a 9x13 baking dish.
  • In a medium bowl whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, ginger, cloves, and nutmeg. Set aside.
  • In a large bowl or stand mixer, beat the brown sugar, eggs, butter, milk, vanilla, and molasses.
  • Slowly add the flour mixture while mixing.
  • Pour batter into the prepare pan and bake for 22-24 minutes. An inserted toothpick should come out free of uncooked dough. It may have a few crumbs.
  • Remove from oven and allow the gingerbread to cool completely before icing. Top with festive sprinkles.

Cream Cheese Frosting

  • Cream butter, cream cheese, and vanilla in a bowl with a hand or stand mixer till smooth.
  • Add powdered sugar a ½ cup at a time till smooth and fluffy. Do not overmix.
