Creamy Sausage and Wild Rice Soup

Servings 6 people

Ingredients

  • 1 lb pork sausage
  • 1 small white onion, diced
  • cup chopped celery (about 2-3 stalks) sliced thin
  • cup chopped carrots roughly chopped
  • 1 teaspoon dried thyme
  • 1 ⅓ cup uncooked wild rice
  • 8 cups reduced sodium chicken broth
  • ¾ cup heavy cream
  • 2 tablespoon flour
  • Salt and Pepper to taste

Instructions

  • In a soup pot, brown sausage over medium heat.
  • Add onion, celery and carrots to the sausage and cook till tender.  Add thyme and stir.
  • Add broth and rice and bring to a boil. Reduce heat to bring soup to a slow simmer. Cook till rice is tender (depending on the wild rice blend you use times may differ, but 30 minutes is around the time it takes to cook).
  • Whisk cream and flour together and add to soup. Stir.
  • Season with salt and pepper and serve.
