Irish Soda Bread Muffins

Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoon white sugar
  • ½ teaspoon baking soda
  • ½ tablespoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon caraway seeds
  • cup raisins
  • ¼ cup butter melted
  • cup buttermilk
  • 1 egg

Topping

  • 2 tablespoon butter melted
  • 2 tablespoon buttermilk

Instructions

  • Preheat oven to 375°F. Lightly grease a 12-cup muffin pan with cooking spray.
  • In a large bowl, mix together flour, sugar, baking soda, baking powder, salt, caraway seeds, raisins, and butter.
  • The mixture will be crumbly, and will bind together when wet ingredients are added.
  • Stir in ⅔ cup buttermilk and egg and mix till combined.
  • Divide the dough evenly into the muffin tin. Mix 2 tablespoon of melted butter with 2 tablespoon of buttermilk. Brush over the tops of the muffins. Bake for 20 minutes. The muffins should be lightly browned on top.
