Cheesy Broccoli, Turkey, and Rice Casserole

Ingredients

  • 3 cup chopped cooked turkey
  • 10.5 oz can Cream of Chicken Soup
  • 1 cup sour cream
  • 1 ¾ cup shredded cheddar cheese, divided
  • ½ teaspoon pepper
  • ½ teaspoon garlic powder
  • 2 cups chicken broth
  • 1 ⅓ cups milk
  • 1 cup uncooked rice
  • 2 ½ cups chopped fresh broccoli
  • 2 sleeves round butter crackers
  • ½ stick butter, melted

Instructions

  • Pre-heat oven to 350°F. Spray a 9x13 casserole dish with cooking spray and set aside.
  • In a large bowl, whisk together the soup, sour cream, ¾ cup cheese, pepper, and garlic powder.
  • Whisk in the chicken broth and milk.
  • Stir in the rice, turkey, and broccoli.
  • Pour into the prepared casserole pan. Cover with foil and bake in the oven for 65 minutes.
  • When casserole has about 10 minutes left to cook prepare the cracker topping. Place crackers in a sealable bag and crush. Pour butter over crackers and toss to coat them evenly.
  • Open the oven, remove foil, and sprinkle the remaining cheese over the casserole. Top with crackers and bake uncovered for an additional 20 minutes.
  • Remove from oven and let the casserole sit for 3-5 minutes and serve.

Notes

I have had some readers have issues with their rice not cooked completely. I have made this many times with the times listed in this recipe. I have adjusted the uncooked time in the recipe for an additional 5 minutes. 
One tip that will help if to make sure you are not opening and closing the oven beyond uncovering the casserole. This will impact your oven temperature. 
Also, make sure to test you oven to make sure it reaches the proper temperature. It is not uncommon for an oven to run cold or hot.
