I am a Green Bay, Wisconsin lady, and there is nothing we love more than celebrating the Green Bay Packers! In Wisconsin, we have a few staple foods when it comes to sports, and one of those is the bratwurst.
We cook brats at home weekly in the summer and fall. They are also a staple in the winter as well because we grill year-round.
My Brat Bites with Spicy Mustard is a delicious addition to a home tailgate party or portable to bring to a tailgate before the game at the stadium.
These bites are super simple and sooooo good. The ingredients are simple: brats, seamless crescent roll dough, stone ground mustard, mayo, and a touch of hot sauce.
I cut a roll of steamless crescent dough in half and roll each of the brats before baking them in the oven.
These brats are not pre-cooked, and I rely on a thermometer to make sure that my meat is cooked to a safe temperature. Over cooked dry meat and under cooked raw sausage is no good, and using a thermometer assures perfectly cooked meats.

- Brats (any flavor will do)
- Seamless crescent rolls
- Stone-ground mustard
- Hot sauce
- Baking sheet
- 5 brats, flavor of choice
- 1 container of seamless crescent roll dough
- 1/3 cup stone-ground mustard
- 1/8 cup mayo
- 1 tsp hot sauce
Pre-heat oven to 350°F. Place a silicone baking mat on top of a baking sheet.
Open the container of dough and stretch till even. Cut the dough in half.
Roll to brats in the dough till ends tough. Cut the dough and secure it around the brat. Place brat on the baking sheet.
Bake for about 25 minutes. Use a thermometer to test the brats to ensure that they are between 160° – 165°F
Remove frats from oven and cool for a few minutes. While brats are cooling, mix together mustard, mayo, and hot sauce.
Slice brats is to bite sized pieces. Serve warm.

Yes, but be sure to pinch the seams to seal it.

Of course! I love cheese or chili cheese flavor!
I don’t have stone ground mustard can I use Dijon or yellow?
Absolutely. You can sub at a 1:1 ratio.
Can I pre-cook the brat before wrapping it in the pastry?
You can, but you might have over-cooked sausage. The dough still needs to full cook even if the brat is cooked to temperature.
What temperature do the brats need to reach?
I recommend between 160° – 165°F
