Eggnog White Russian

December 6, 2019 by Ashley Lecker 6 Comments

Eggnog White Russians are a creamy and rich holiday cocktail that is perfect for a party. Coffee liqueur, vodka, and creamy eggnog. Topped with cinnamon and whipped cream for a delicious holiday drink.

Eggnog white Russian in a glass with whipped cream

I love a festive drink at a party or even while I am home watching a movie after the kids go to bed. We are eggnog lovers in our house and I love to enjoy a glass of the seasonal creamy drink. I think, for me, one of the reasons I love eggnog is the yummy smell- it always reminds me of sugar cookie dough!

I also love White Russians, and this recipe give the original combination of coffee liqueur, vodka, and cream a little twist. I substitute eggnog for the cream, and the result is a rich, flavorful, and delicious drink. Besides being delicious this drink is a snap to put together. I opt for a store bought eggnog for this recipe, but you can always opt to use your own delicious mix. I even like to top mine with a little whipped cream and ground cinnamon for a little extra holiday indulgence.

Whenever I think about eggnog and the holidays I always think about those glass moose cups Cousin Eddy drinks eggnog out of during the movie Christmas Vacation. That is still one of my all-time favorite Christmas movies! What are some of your favorite movies to watch during the holidays? I also love Home Alone, Miracle on 34th Street and The Ref!

Christmas Light Cookies

December 4, 2019 by Ashley Lecker 11 Comments

Christmas Lights Cookies are twinkling, sparkling, and so delicious! A classic sugar cookies, with a simple white icing, and garnished with a chocolate string of lights. Perfect for any cookie exchange to keep the season merry and bright.

Today is National Cookie Day and what better was to celebrate with a festive Christmas cookie? Christmas lights are one of my favorite thing about the holidays. Our family love to go on light drives to look at all the beautiful displays and decorations. We bundle up, sip hot chocolate, and enjoy the ride with some holiday tunes.

These cookies are a simple way to enjoy editable lights! I use a simple soft sugar cookie recipe and a simple white icing that sets as it dries. The decorations are a black frosting tube with a fine decorating tip and mini M&Ms for the lights!

These cookies are sooooo cute and a showstopper at any exchange or holiday gathering. My kiddos love to pick off the M&Ms, gobble them up, and then enjoy he cookie. However, you can enjoy in any order your heart desires!

Chocolate Saltine Cracker Toffee

December 4, 2019 by Ashley Lecker 4 Comments

Chocolate Saltine Cracker Toffee is a simple Christmas or holiday treat that is perfect for a dessert tray or a party. Saltine crackers and brown sugar buttery toffee are baked together and topped with rich semi-sweet chocolate. A perfect sweet bite everyone will love!

candy stacked on a napkin

Simple sweets and candy are a staple of Christmas food cuisine traditions in our house. I love to make different types of candy and treats. I also love when I have a simple recipe with simple steps and consistent results. Enter Chocolate Saltine Cracker Toffee, some people call it “Christmas Crack”, but I am not into that, and it is simply “cracker toffee” in my house.

This recipe is so simple and the ingredients are likely something you keep on hand in your pantry. Saltine crackers and a simple brown sugar toffee create a rich, buttery, sweet, and crisp layer topped with a sprinkle of salt, and a creamy semi-sweet chocolate. Once the candy sets and cools it is chopped and enjoyed throughout the holiday.

Christmas Wreath Veggie Pizza Appetizer

December 3, 2019 by Ashley Lecker 5 Comments

Christmas Wreath Veggie Pizza is a festive holiday appetizer with a fun Christmas theme! Crescent roll dough is shaped like a wreath and baked. Topped with seasoned veggies spread and fresh vegetables makes this a new holiday tradition!

veggie pizza on a plate

Veggies pizza is one of my favorite easy appetizers to bring to a get-together or serve when I am hosting. I use pre-made crescent roll dough, a layer of seasoned a cream cheese and sour cream blend, and lots of chopped fresh veggies.

When I make this wreath I like to use holiday reds and greens for the veggies. Fresh broccoli, chopped cucumbers, baby tomatoes, and diced red bell pepper work perfectly for garnishes. I especially love to use a red bell pepper for the bow on the Christmas wreath! Other delicious toppings could be green bell pepper, spinach, cauliflower (for a snowy wreath!), green olives, green onion, and chopped roasted red peppers

To serve, I cut the wreath in to wedges and serve it cold or allow it to come just under room temperature. This appetizer never lasts long in a crowd!

  4. Arrange each half around the bowl. Pinch the ends together to make a circle and press to dough to flatten so it bakes evenly.
  5. Remove bowl and place baking sheet in the oven. Bake for 11-12 minutes.
  6. Remove dough from oven. Press the dough down in any areas it might have bubbles so the surface is even. Allow dough to completely cool (about 30 minutes).
  7. While dough cools mix cream cheese and sour cream in a mixing bowl. Add the ranch seasoning, dill, and garlic. Stir.
  8. Spread the cream cheese mixture evenly on the dough. Decorate with chopped veggies. To make the bow, cut a ring of red pepper and slice at each lobe to give three U-shaped pieces. Cut one in half. Arrange with two lobes to create the loops and the two remaining pieces under the loops.

Cranberry Gingerbread Upsidedown Cake

November 21, 2019 by Ashley Lecker 16 Comments

Cranberry Gingerbread Upside Down Cake is a mix of holiday favorites. Moist and rich gingerbread cake baked with fresh cranberries, and topped with a dusting of powdered sugar.

gingerbread cake on a plate

Gingerbread is a holiday staple for me. I love the flavor in almost any sweet- cake, cookies, coffee, bread, cheesecake…you name it and I am a fan. It is hard to beat a traditional gingerbread cookie, but my recipe for Cranberry Gingerbread Upside Down Cake is one of my favorite holiday desserts.

In addition to loving gingerbread, I also love cranberries. The combination of the two together is one of my favorite flavor pairings.

Upside Down cake is a wonderful way to get really a really moist cake. The batter is placed over the chosen fruit and baked to get a gooey bottom that is eventually flipped to become the top. The gingerbread in this cake is so rich and full of flavor and the tart cranberries are the perfect combo for this cake. I like to keep this cake simple with a light dusting of powdered sugar, but a little whipped cream would be delicious as well.

Frequently Asked Questions

My springform is leaking- what can I do?

The can can be wrapped in foil to help prevent leaks. Sometimes springforms can warp and it can cause issues with leaking.

My cake has a little too much height in the middle and is not flat to flip- what should I do?

Trim some of the gingerbread so that is can sit relatively flat on a plate.

Can I use cranberry sauce?

I have not tested it with cranberry sauce. It will likely not stay separate, but will still be tasty. It might work better to swirl the sauce into the cake versus putting it at the bottom.

Creamy Turkey Over Biscuits {Thanksgiving Leftover Recipe}

November 19, 2019 by Ashley Lecker 3 Comments

Creamy Turkey over Biscuits is a delicious way to use leftover turkey after Thanksgiving or Christmas. Shredded and warmed creamed turkey in an herb sauce and served over buttery biscuits make this a leftover to devour.

creamed turkey over a biscuit

One of the best things about the holidays are the leftovers. However, there have been times that there is a little too much leftover turkey, and I get a bit tired of turkey sandwiches.

Today, I am sharing my first of a series of three recipes to help re-purpose leftovers to delicious meals and snacks everyone will love. Check in over the next few days to see recipes using holiday favorites like roasted turkey and cranberry sauce!

Meals from leftovers are one of my favorites, and create some of the most fun memories. One of my favorites is for “hot-shots” using leftover turkey, mashed potatoes, and gravy. You can see my post about them in my Roasted Garlic Mashed Potatoes (+Turkey and Gravy) post.

Frequently Asked Questions

The butter and flour mixture looks lumpy- am I doing something wring?

No, It does not need to look smooth because it will absorb into the liquid and thicken the creamy sauce. However, it should not look crumbly- that could mean there is too much flour. In that case you might need a little additional butter to get a wet sand consistency.

Can I use chicken in place of turkey?

Of course, sub on a 1:1 ratio.

Does the meat need to be cooked prior?

Yes, this recipe uses cooked meat. I have not tried this recipe starting the meat in a raw state.

Can I use leftover bread or roll in place of the biscuits?

Absolutely! Mashed potatoes are a good choice as well.

I do not have dried thyme. Can I use something else or omit the herbs all together?

Yes, the herbs can be left out of the recipe. You could also use parsley or marjoram.

Roasted Garlic Mashed Potatoes (+ Leftover Shredded Turkey and Gravy)

November 15, 2019 by Ashley Lecker 16 Comments

This post is sponsored by McCormick® but the content and opinions expressed here are my own. #McCormickMakesItHome #McCormickAtMeijer

The holidays are fast approaching and are a time for family, friends, and food. For over 100 years McCormick® has worked hard to bring the best flavors to the holiday table. Delicious meals prepared at home help create lifetime memories. Stop in at your local Mejier store to get the best selection on McCormick® Extracts, Herbs & Spices, or Gravy products for the holiday season.

mashed potatoes in a bowl

My family loves mashed potatoes and we always have a giant bowl on our dining room table. The traditional recipe of potatoes, butter, salt, pepper, and whole milk is given a fun twist with roasted garlic. Roasting garlic at home with a little salt and McCormick® Black Pepper is a simple and yummy way to elevate your holiday recipes.

I don’t think that my family would allow me to come to the table with out a bowl of warm, creamy, buttery mashed potatoes. For me, that is a staple and a must-have. Besides being excellent for soaking of juices, flavors, and gravies, mashed potatoes are great because almost everyone likes them, and I know my kiddos always request a big scoop on their plates.

McCormick® Extract, Herbs & Spices, or Gravy products has a wide variety of products to help with holiday preparations. A few of my favorites are McCormick® Garlic Powder, McCormick® Poultry Seasoning, McCormick® Ground Cinnamon, McCormick® All Natural Pure Vanilla Extract, and McCormick® Pure Ground Black Pepper. All of these products and more can be purchased at your local Meijer store.

seasoning placed together

I love all of the different options McCormick® offers at Meijer! Looking at different seasoning options is a fantastic way to change-up classic holiday recipes for something new, or as a way to enhance something you already love. For example, I love to use a little of McCormick® Poultry Seasoning in my Roasted Garlic Mashed Potatoes because the blend of herbs compliments my savory potatoes, and makes them even better!

What do you need to make Roasted Garlic Mashed Potatoes?

  • Russet potatoes
  • Whole milk
  • Butter
  • Salt
  • McCormick® Pure Ground Black Pepper
  • McCormick® Poultry Seasoning
  • Roasted Garlic
  • Mixing bowls
  • Hand mixer

Frequently Asked Questions

Can I use a different type of potato?

Sure! Red skinned and Yukon will also work well in this recipe. However, other types may produce a different texture.

My potatoes are kind of gummy- what can I do?

Make sure when whipping the potatoes to add the milk slowly. If the potatoes are still a little heavy, slowly add a little more milk.

Can I use a different type of milk like 2%?

Yes, I like whole because it is creamier, but 2% will work just fine.

What is the best way to warm the potatoes?

I like to warm them in the microwave or oven with a few pats of butter on top.

Is the garlic super strong?

It all depends on how much you use. I call for 4 for this recipe, but you can add more or less depending on your preferences.

Let’s Talk Roasted Garlic!

Roasting garlic is one of the easiest enhancers around. I cut the tops off my garlic, place in foil, season with salt and pepper, and drizzle with olive oil. I use the foil to wrap around the garlic and I bake it at 375°F for about 40 minutes.

Here is the fun part.

Once the garlic is ready all you have to do is squeeze the bulb and out come all the yummy, soft, roasted garlic cloves!

THE LEFTOVERS

We all know one of the great things about holiday meals is the leftovers, and McCormick® can help with that! I typically have a bit of leftover turkey and potatoes after the holiday, but many times we have eaten all the gravy. McCormick® offers lots of delicious gravy mixes, and my favorite is the McCormick® Turkey Gravy. I make the gravy with a little water and chicken stock and toss it with leftover warmed chopped or shredded turkey.

turkey and gravy ingredients

The turkey and the gravy are the perfect post-holiday meal. After a day of shopping (or returning), celebrating or entertaining this quick dish is an easy way to use holiday leftovers.

McCormick® Turkey Gravy is smooth, savory, and delicious to serve with leftover holiday turkey. McCormick® Turkey Gravy is available at Meijer along with other McCormick® Extract, Herbs & Spices.

When I was a kid I remember being at my Grandma’s house for the holidays and after our holiday meal we always had “Hot-Shots” the following day. The “Hot-Shot” is shredded or chopped turkey over a piece of buttered bread with mashed potatoes, and finished with gravy. Whenever I think about leftovers that is the meat that immediately comes to mind.

Check out my video to make my version of a “Hot-Shot” using my Roasted Garlic Mashed Potatoes!

I like to finish my turkey and gravy over mashed potatoes with a little extra McCormick® Turkey Gravy poured over the top. It is just too hard to pass-up this recipe!

Grinch Shortbread Cookies

November 14, 2019 by Ashley Lecker 8 Comments

I received products from sponsor companies to aid in the creation of the Christmas Cookies Week recipes. All opinions are mine alone.

“You’re a mean one Mr. Grinch….”. A favorite holiday character inspires a tasty Christmas cookie- Grinch Shortbread Cookies. A simple, sweet, and buttery recipe with a tinge of green and the Grinch’s growing heart.

cookies on a cooling rack

The Grinch Who Stole Christmas is my favorite holiday movie. I always find myself singing a lot and laughing at The Grinch and his sneaky ways. My boys love the movie as well and we end up watching it numerous times during the holidays. We have watched the different versions of the movie, and we are a strong vote for the original version.

To give a little nod to my favorite holiday movie character I am sharing my recipe for Grinch Shortbread Cookies. These cookies are delightfully easy, and so festive for a cookie exchange or a holiday cookie tray. I use my traditional shortbread base, a bit of green color, and a heart sprinkle for the Grinch’s heart when it was still “three sizes too small”.

I use my recipe for Peppermint Shortbread Cookies and omit the peppermint to get the base of these cookies. This recipe is so simple, and one of my all-time favorite cookies recipes.

What do you need to make Grinch Shortbread Cookies?

  • Unsalted Butter
  • Powdered Sugar
  • Vanilla
  • Salt
  • Flour
  • Green Gel Food Coloring
  • Heart Sprinkles
  • Baking Sheet
  • Stand Mixer

How do you make Grinch Shortbread Cookies?

{Printable recipe below}

1. Using a stand mixer, cream butter, powdered sugar, vanilla, and salt until smooth.

2. Mixing on low speed, slowly, add flour until combined. Add food coloring and mix to give a green color.

3. Remove dough from mixer and place on parchment paper. Form into a 12- to 14-inch log. It is easier to get a uniform log is you start the dough at one side of the paper, form, and then roll it into a log.  freeze at least 30 minutes or until firm. Note: If you freeze the dough for longer than 30 minutes let it sit for 20-30 minutes so you are able to cut it and get even slices.  If your slices are not even rounds the cookies will not cook evenly.

4. When ready to bake the cookies, preheat oven to 350°F. Cut the shortbread dough into 1/3 -1/2-inch slices and bake for 12-13 minutes on parchment lined or slip-mat lined baking sheets.

5. Immediately when cookies come out of the oven add a heart sprinkle to each cookie. Transfer to cooling rack.

Frequently Asked Questions

I do not have gel food coloring- can I use regular bottled?

Yes, but you might not get as vibrant green color. The gel tends to give a brighter color.

I am having a hard time cutting the cookies- any tips?

My sure that your dough is not too frozen. If it is it tends to give uneven slices and it hard to slice.

My cookies seem dry- should I be adding more butter or an egg?

No, shortbread is not a moist soft cookie. It is a bit crumbly and very buttery. You do not want to cookies to be too soft. When the cookies first come out of the oven they will be soft, but will set as they cool.

Adams traces its beginnings back to Battle Creek, Michigan, when John A. Adams began making and selling his Green Plant Sarsaparilla extract, Adamur, in 1888. In 1905, he moved his family to Beeville, TX. At the time, most vanilla sold to pharmacies and was often labeled “Do not bake or freeze.” John A. Adams’ wife yearned for a flavoring that wouldn’t bake or freeze out. He announced that he could produce a better vanilla than the one his wife was currently using. Working with just $6.71 worth of materials on top of an old icebox, John A. Adams discovered the formula he wanted. To test this product, his wife whipped up a cake for the family to try. “John, this is the BEST flavoring I have ever used,” she announced. “Well, that’s old man Adams BEST,” he responded.

Sugared Sparkling Cranberries

November 4, 2019 by Ashley Lecker 10 Comments

It is Cranberry Week! Sugared Sparkling Cranberries are a holiday treat everyone will love. Fresh cranberries, soaked in simple syrup, rolled in fine sugar, and dried create the perfect sweet and tart treat for any cranberry lover. They are also fantastic as a decoration on a cake.

sugared cranberries in a bowl

Cranberry Week is here! I am teaming with a few friends to bring you all things cranberry this week. The cranberry is so much more than sauce (don’t worry I will have a recipe for the later this week). They are awesome for baking, appetizers, and treats as well. I love the tart sweet flavor of cranberries paired with savory holiday food, but I also love them on their own in a drink, or in this case, as a bite-sized snack!

These Sugared Sparkling Cranberries are one of my favorite treats. They are soaked in a simple syrup, tossed in a fine sugar, and then allowed to dry so the sugar creates a crust around the sweetened tart cranberry. It is such a wonderful texture and the taste is like a cranberry juice cocktail. I love to make these for parties, or to use when decorating a cake.

What do you need to make Sugared Sparkling Cranberries?

  • Fresh Cranberries
  • Granulated Sugar
  • Water
  • Fine Sugar (Baker’s Sugar)
  • Sauce Pan
  • Mixing Bowls
  • Baking Sheet
sugared cranberries in a jar

Frequently Asked Questions:

Why is important for the simple syrup to be hot? Can I make it in advance for soaking?

The hot syrup causes cracks in the cranberries and allows them to better soak in the sweet syrup.

What is the difference between baker’s sugar and granulated? Can I just use granulated?

Baker’s sugar is very fine. I have tested this recipe using granulated for the rolling, and it does not have the result I wanted. The sugar is too course to stick to the cranberries like the baker’s sugar. Granulated is fine to make the syrup, but I do not recommend it for the rolling part of the recipe.

Can I make these in advance?

I recommend 1-2 days for in advance.

What can I use the syrup the cranberries soak in for?

I like to use it for drinks! I have also used it to soak or brush on top of baked goods.

How do I serve these cranberries?

I serve them in a bowl, or I like to use them as a garnish for baked goods- like a cake- like my Cranberry White Chocolate Layer Cake.

Burgundy Mushrooms (+Slow Cooker Instructions)

September 13, 2019 by Ashley Lecker 7 Comments

Burgundy Mushrooms are the ultimate mushroom. Slow simmered in red wine, garlic, butter, and spices these mushrooms are decadent. Serve over steak or eat as an appetizer- they will be a fast favorite. This recipe is prepared on a stove top, but I have included slow cooker instructions as well!

mushrooms in a white bowl with a spoon

September is National Mushroom month and who would I be is I was not sharing one of my favorite things to eat with all of you.

Mushrooms are one of my favorite foods, but you might notice that you do not see them very often on here. The reason for that is my husband. Yes. All. His. Fault. It actually isn’t, but he is allergic to these delicious bites of heaven so I tend to keep them out of recipes. He doesn’t have a sever reaction, but it isn’t comfortable for him. However, that means any time he is gone, or I go out, I get mushrooms on everything.

One thing I will never give up is this recipe. This recipe is my all-time favorite mushroom recipe, and probably one of my favorite things to eat. This is my most requested recipe during the holidays, and there are hardly ever leftovers. However, even if there where they would get gobbled-up the following day.

mushrooms in a white bowl with a spoon

So what makes these mushrooms so special?

Wine and butter my friends, wine and butter. These mushrooms are cooked in full-bodied red wine, butter, and herbs. They are cooked for a very long time, but it creates the most flavorful delicious mushroom you will ever have.

I love to serve these for a party or the holidays because the smell of them cooking just fills the house with the most delicious aromas.

These mushrooms are delicious on their own, over potatoes, over steak with a little blue cheese, or even over crusty bread to mop up all the sauce. They are truly the best comfort food.

  • Pepper
  • Water
  • Chicken Bouillon Cubes
  • Beef Bouillon Cubes
  • Dill seed
  • Garlic
  • Large cooking pot
  • Slow Cooker

Frequently Asked Questions

I do not have burgundy wine- what do you suggest?

I have used Merlot and Cabernet for this recipe and it produced delicious results.

Can I use baby portabella mushrooms?

Yes! I have also used these as well and love them as much as I love the white button.

Is the dill flavor strong?

I do not think so. I like the contrast it adds to the richness of the mushrooms.

Can I add a little salt?

I do not think it needs salt, but everyone is different. If you do add it add it at the end after you have tasted the mushrooms.

Can I use garlic powder and not cloves for a shortcut?

Sure, I have done this as well. I use a 1/2 tsp per clove substitution.
